Monika's Turkey Meatloaf

Try this lighter version
of a classic home-cooked meal.
It is deliciously moist and perfect for a fall day.

Total time: 1 hour 45 minutes
  Prep: 30 minutes
  Cook: 1 hour 15 minutes
Yield: 8-10 servings
Level: Intermediate

Ingredients:

  • 6 slices of sandwich bread (or equivalent amount of other types of bread)
  • ½ c milk (we usually have 1%)
  • 1 tbsp. canola oil
  • 1 medium onion
  • 2 cloves garlic
  • 8-10 medium button mushrooms
  • 2 carrots
  • 2 stalks celery
  • ¼ tsp salt
  • 1-1.5 lbs. ground turkey
  • ½ c fresh parsley, finely chopped
  • 1 egg
  • 2 tbsp. ketchup 
  • 1 tsp. paprika
  • 1/4 tsp. ground pepper
  • 1 tsp. Vegeta (or another spice blend such as Mrs. Dash Original Blend)
    Note: Vegeta has salt in it, so I do not usually add more salt to the recipe.  However if you are using Mrs. Dash you may want to add a ½ tsp salt to the loaf when adding the spices.

Directions:

Cut bread into half-inch cubes and soak in the milk. Make sure that the bread is really pushed down into the milk so it all gets a chance to soften. I usually use whatever bread is probably going to go bad, such as the ends of a loaf of whole-wheat sandwich bread or leftover dinner rolls, whatever I have on hand.

Dice the onions, carrots, and mushrooms into ¼-inch pieces. Pre-heat the oil and sauté the onion on medium heat until translucent. Add the garlic and let brown a bit, then add the mushrooms, carrots, and celery. Sauté all ingredients until the onions release the liquids and vegetables soften a bit, approximately 10 minutes. I usually add about a ¼ tsp of salt at this stage, to help the mushrooms along, but season to taste. Take the vegetables off the heat and let cool to room temperature.

In the meantime, mix ground turkey, softened bread with milk, and all other ingredients in a bowl. Add the cooled vegetables and mix well. Spray your baking pan with a non-stick spray. Add the mixture into loaf pan or any other baking pan and shape into a loaf.

Bake covered in aluminum foil at 375 for 45 minutes, then un-cover and bake an additional half hour. The total baking time is 1 hour 15 minutes.

Enjoy sliced, with any sauce you desire or, as my husband likes, with ketchup. I usually serve it with jarred gravy (such as Heinz Fat Free Mushroom Gravy), boiled, smashed potatoes and a vegetable or a side salad. Delish!
